As a reminder, your screen and audio recordings are stored locally and NEVER leave your Mac. You can read about accessing your Rewind data here.
The email on your Rewind account is only used for logging in. If you have a paid Pro Monthly or Yearly account, this is tied to Stripe. You can manage your subscription by logging into your customer portal or clicking on the Rewind icon in the menu bar (upper right hand corner of your Mac) > Settings.
