You can pause and resume capturing in multiple ways.
From the menu bar
Click on the Rewind icon in the menu bar
Toggle off "Screen Capture"
When Rewind is open
Click on the three dots in the bottom right hand corner
Toggle off "Screen capture"
From the dock
Right click on the Rewind app icon in the dock
Select "Pause Screen Capture"
